HACCP stands for Hazard Analysis Critical Control Points. This is an analysis of critical control points which must receive extra attention. HACCP analyses the entire production process for any threats to food safety. It lists the threats and the attendant risks are managed by establishing controls and checking the results.

The BRC standard was introduced by the British Retail Consortium. This quality standard was developed for suppliers of foodstuffs to UK supermarkets; retailers including Tesco, Safeway, Somerfield and Sainsbury joined together in the nineties to form the British Retail Consortium to demand that their foodstuff suppliers meet the 'BRC-standard for Food'. The most recent norm in the BRC standard imposes requirements on production, the environment and on quality management systems.
